Well, didn’t know what to make for lunch today especially that I’ve been extremely busy moving from state to state! I opened my freezer to see what comes to mind. I’ve been craving vegetarian food lately (think I’m turning into one, lol). I had some soaked bulgur wheat in the fridge from the previous day and in my freezer had a bag of Italian green beans that I always have on hand. So here goes…. within 20 minutes or so, I had a delicious and healthy lunch and it was sooooo yummy!
Ingredients:
1 cup of soaked bulgur wheat. (rinsed and soaked in warm water for 10 minutes at least).
1 bag (12 oz) of cut Italian green beans, frozen (Italian beans look wider and are tastier then French or regular beans in my opinion 🙂
3 large tomatoes diced small
1 clove of garlic, minced
1 large onions, diced.
1 1/2 cups hot water or can use vegetable broth
2 T olive oil
1 Tablespoon of Pomegranate Molasses (can be found in Middle Eastern markets) optional.
Salt & black pepper to taste (I always add a dash of cayenne pepper).
Heat oil, salt & pepper, diced onion & garlic. Cook until onion is translucent for about 5 minutes on high heat. Add the tomatoes & water and cook for 5 more minutes then add the frozen green beans & continue cooking until they are fork tender (can take from 6-8 minutes). By now, you can smell the great aroma and feel the anticipation of this easy lunch!!!
Add the soaked bulgur wheat and cook for 10 minutes on medium heat or until the bulgur has soaked up all the juices. If you like tangy flavors, you can add the pomegranate molasses now and mix it in. You will notice that the bulgur plumbed up and integrated the tasty ingredients in each peace.
You can serve this dish with a green salad or Greek yogurt.
I added a green onion for garnish.
