It has been quite a long time since I posted a new recipe on my blog and for that I apologize.
Not to say that I have been sitting idle not doing anything! I’ve been baking, cooking, canning, making Belgian chocolates, drying fruits, planting my organic garden, composting, recycling etc.. taking photos of all of these activities but not putting enough of an effort to post them on my blog. I made a promise to myself though to turn a new leaf with the beginning of this year, especially after I relocated across the world to my home country and I had taken sometime to adjust emotionally and psychologically.
I decided to start the year by posting something sweet, but not too sweet, healthy and light. Sure you can make this recipe lighter and healthier by using amaranth and teff which are full of proteins and all the good stuff. The texture of this baked goodness is soft, fresh and delicate as if it’s made of air! I think this cake is Exquisite but you have to try it for yourself and let me know.
P.S: you can add warm caramel sauce over the cake for an elegant look!
Ingredients:
- 1 cup dates-chopped
- 1 cup walnuts-chopped
- 1 tsp baking soda
- 1 cup boiling water
- 1 1/2 cups all purpose flour-sifted
- 1 tsp cinnamon
- 1/4 tsp powder ginger (optional)
- 1/4 tsp salt
- 1 cup sugar/ you can use brown sugar as well
- 1/2 cup softened unsalted butter
- 1 whole egg
- 2 egg yolks
- 1 tbsp vanilla extract
Instructions:
- Preheat oven to 350 degrees F or 180 C
- Prepare the bundt pan by spraying it with vegetable spray/dust it with a bit of all purpose flour. Set it aside.
- Place the chopped dates and walnuts in a bowl. Add the baking soda and the boiling water. Set it aside.
- Sift the flour, cinnamon and salt. Set it aside.
- Place the soft butter in your stand mixer and beat it until creamy. You can use a hand mixer as well.
- Add the sugar gradually and keep beating the mixture until it becomes pale yellow.
- Add the egg, the 2 egg yolks. Beat for a minute then add the vanilla. Beat again until it’s well combined.
- Use a rubber spatula and alternate adding the flour mixture with the dates/walnuts mixture to the prepared batter.
- Spoon the batter into the prepared bundt pan.
- Bake for 40-45 minutes or until an inserted toothpick comes out clean.
- Cool on a wire rack before inverting the cake into a cake plate.
- I added sliced dried organic apples from our garden to the top of the cake.
This is a delicious cake, so appropriate for a cold winter night.
