A canapé is a small decorative hors d’oeuvre that’s usually eaten in one bite. By definition a Canapé is a thin piece of bread, toast or cracker spread or topped with cheese, caviar, anchovies, or other savory food. Today, I’m making vegetable canapés, they make pretty little bites and are easy to prepare.
Ingredients:
1 (3-ounce) package cream cheese, softened
3 tablespoons frozen minced chives
3 tablespoons sour cream
1/2 teaspoon dried dillweed
1/4 teaspoon garlic salt
1/8 teaspoon ground white pepper
8 thinly sliced white bread
8 thinly sliced whole wheat bread
Thinly sliced cucumber, squash or radishes, shredded carrots
Sliced cherry tomatoes
Fresh watercress or dillweed sprigs
Method:
Beat cream cheese at medium speed of an electric mixer until fluffy. Stir in chives and next 4 ingredients; set aside.
Cut 2 (1 3/4-inch) rounds from each bread slice. Keep rounds covered with damp towels before assembling to prevent from drying out.
Spread each round with 1 teaspoon cream cheese mixture.
Top with assorted vegetables as desired. Add watercress or dillweed sprigs just before serving.
Yield: 32 appetizers.
