Today, I felt like experimenting a bit with a new cake recipe that honestly turned out yummy! I used low fat vanilla yogurt, however, you can use plain yogurt if you like.. Yogurt gives a light texture and adds a great flavor to the cake!
Ingredients:
3 eggs at room temperature
1 cup vanilla yogurt
3/4 cup canola oil
1 1/2 cups sugar
3 cups all purpose flour
1 teaspoon almond extract or vanilla extract
dash of salt
3 teaspoons baking powder
1/4 teaspoon baking soda
1 banana quarterly sliced
Method:
Prepare your cake pan with vegetable spray and a dust of flour. Set aside.
In your standing mixer, whip the eggs for a couple of minutes, add sugar, salt, almond extract. Continue beating till the eggs turn pale yellow. Add yogurt and oil and beat for 1 minute.
Mix the flour with the baking powder and soda. While the mixer is running on low, add the flour mixture one tablespoon at a time until all the ingredients are incorporated.
Slice the banana into quarters and mix the batter using a spatula.
Pour the batter into the prepared cake pan and let rest on your counter top for 10 minutes before baking. This allows the cake to rise better.
Bake in a 350 degrees preheated oven for 45 minutes or until an inserted toothpick comes out clean.
Dust it with powdered sugar and add any seasonal fruits you like!
