One of the ways I recycle food is by integrating a variety of ingredients in my recipes and make them my own.
I had some extra feta cheese on hand and felt like making some spring rolls today. My husband doesn’t like cooked onions, so I came up with a new version of cheese spring rolls (just for him)! I added onions, don’t get me wrong, however didn’t want him to feel the crunch so I added the heart of a romaine lettuce and it turned out really good. Here it goes:
Ingredients:
1 cup feta cheese crumbled
1 cup chopped parsley
1 romaine lettuce heart, finally chopped
2 green onions, chopped
1/2 cup shredded mozzarella cheese
few sprigs of fresh mint, chopped
Black pepper, dash of cayenne pepper to taste
1 bag of spring roll sheets (you can find in all supermarkets, middle eastern & asian markets)
Method:
Combine all the ingredients together except the spring roll sheets.
On a large plate, put one sheet of rolls, add 1 teaspoon of mixture & roll. Dab your finger with a touch of cold water and put on the edge of the sheet to seal it so it doesn’t open while baking.
Repeat the process until done.
Spray the bottom of a baking sheet with vegetable spray, line the filled rolls in it. Spray top with a little vegetable spray as well and bake in a 400 degrees oven till nice and crisp. Ovens vary but in mine, it takes 12 minutes.
P.S: I don’t add salt to the mixture because feta cheese is already salty.
