You can fill all the Kafta muffins that you just made with mashed potatoes and here’s the recipe.
It’s very easy and healthy because I make it with plain yogurt and not sour cream.
Ingredients:
2 pounds russet potatoes.
2 cups plain yogurt
Salt and pepper to taste
1/2 cup olive oil
1 clove garlic, mashed.
1 quart size Ziploc bag
Method:
Wash the potatoes well, peel and cut them into a golf ball size. Put them in a casserole filled with cold water on high temperature with 1 teaspoon salt and cover them.
Once they start boiling, lower the temp and cook until tender. This might take about 15 minutes. When done, drain all the water out and put them in a food processor or mash them with a potato masher until smooth. Add the remaining ingredients and mix well.
Put some potatoes in the Ziploc bag, hold it in your hand and twist it.
Cut the tip of the bag with scissors and fill the kafta muffins that you just made.
Bake it for 5 minutes with the kafta and sprinkle some chopped parsley on top for decoration if you like..
