You can use the sprouted mung beans from my previous post in a variety of ways and recipes. I incorporated them with feta cheese, parsley and other ingredients infusing the Mediterranean flavors in them. That turned out real tasty and yummy!
Ingredients:
3 cups of sprouted mung beans
1 cup of chopped dried mint
1 cup of chopped parsley
1 cup feta cheese
Juice of 2 lemons or to taste
2 chopped tomatoes
2 tablespoons of dried thyme
1/4 cup of extra virgin olive oil
Salt, pepper and cayenne pepper to taste
Zest of one lemon
4 green onions, chopped
Method:
Mix well all ingredients except the feta cheese.
Adjust the flavors according to your taste and add or omit any of the ingredients that you don’t like.
Plate in a nice bowl and sprinkle the feta cheese around to decorate and enhance the flavors.
