2 eggs (room temperature)
1 1/2 cups sugar
1 1/2 cups all purpose flour – dash of salt
1/2 cup oil
1 cup plain yogurt
1 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon vanilla
1 1/2 teaspoons cinnamon
2 granny smith (tart) apples, diced very small
1 cup chopped walnuts, divided
Method: Preheat oven to 350 degrees
Beat eggs until frothy, add vanilla and sugar. Continue beating then add the remaining ingredients except the apples, cinnamon and walnuts. Rub the cinnamon with the apples, add 1/2 cup walnuts and fold gently in the mixture. Spray bottom and sides of a bundt baking pan.
Pour the mixture in it. Sprinkle the remaining 1/2 cup walnuts on top. Set aside and let the cake rest for half an hour before baking. Bake for about 40 minutes or until an inserted toothpick comes out clean. Cool on counter then turn it onto a nice round dish. You can dust some powdered sugar for garnish if you like.
