My sister-in-law Siham is famous for making this dessert among many other things and she shared the recipe with me. It’s made with Lady fingers which is a very delicate cookie consistent of a mixture of flour, eggs, sugar and butter. It’s an airy cookie that’s not hard to make, however for this recipe, I prefer to buy the already made cookies. Here’s the recipe:
Ingredients:
2 packages of Lady Fingers
1/4 cup milk
1/4 cup sugar
150 g unsalted butter, softened
2 16 oz cans of cocktail fruit salad, drained and juices reserved
300 g of toasted almond slices
Method:
Spray a bit of vegetable spray in a 9×13 Pyrex baking dish. Set aside.
Boil the milk in a casserole, add the sugar and mix well. When cooled, add the almond slices and butter. Mix.
Drain the fruit salad over a strainer then add to the almond mixture.
Dip each of the lady fingers in the fruit salad juice and lay flat in the baking dish.
Top with the almond/fruit salad mixture and gently press with your hand.
P.S:You can make this dessert ahead of time and freeze. When ready to use, cover with sweetened whipping cream or whipped topping and serve cold. It’s easy to make and I’m sure your family and guests will praise you for it! Give it a try and let me know what you think!
