We just made the kafta and mashed potatoes. We can serve that dish with a rice side dish that is so scrumptious!
Ingredients:
2 cups Basmati rice
2 Tablespoons olive oil
4 cups boiling water
Salt
1 garlic clove, mashed.
Method:
Rinse the rice real well under cold water.
In a casserole pan, put the olive oil, add the rice and cook for about 5 minutes over medium heat.
Add 4 cups boiling water, salt and garlic.
Cover and cook over low heat for 20 minutes or till done.
You’ll notice that by cooking the rice with the oil first, the rice pieces come out separated.
Let rest for 5 minutes before plating it and serving it with Kafta or other dishes.
For decoration, you can add some toasted pine nuts or slivered almonds.
I added some sauce from the kafta on top and sides to make the guests aware that this dish is served with the kafta/mashed potatoes.
